As many of you know I own a Bistro. I am the chef and operator. I created my menu with the idea in mind that I wanted to dispel all the myths that healthy food, vegan, and gluten-free foods are boring or tasteless as a diet of a grapefruit breakfast and celery stick lunch. Healthy can be gourmet and very vibrant in flavor!
Gluten-free has a reputation for being grainy and tasteless. It does not have to be this way. More and more people are being diagnosed with Celiac or gluten-free intolerance, so there are many other chefs, like myself, or kitchen divas out there that enjoy the challenge, and are trying to make great gluten-free food that tastes great and has great texture like”regular wheat based foods”. I love when I find something already out there that is both. I always have a Gluten-free vegan bread and these teff wraps on hand for all my customers to choice with any sandwich option. One 10-year-old boy was amazed how good it tasted when I prodded him into trying the wrap after he says he really hates GF bread. You can use it for sandwich wraps, burritos, enchiladas, deep-fried it like other tortillas too. Go crazy! I get mine at the local Co-Op.
A TIP: All Gluten-free tortillas need to be heated for 15 seconds to 30 for max pliability ….So HEAT, CREATE, MOLD, and ENJOY!!
