Coy Bettie’s Espresso & Bistro will be open Sundays now 9am to 3pm. There is less competion for parking on Sundays . Use the back entrance as the bookstore is not open on Sundays at all. Looking forward to serving Nampa, ID lunch.
Coy Bettie have been hard to get the expansion finished….tons of retro lighting (not in picture 😉 ), faux painted walls, Local artist’s art interpretation of logo, framing new classic Hollywood art, collecting retro art collections of things….great ambiance for breakfast, espresso, lunch at the bistro or to get your gluten-free bread or vegan bread. and retro inspired gift shop…

I would love to say that jumping on the health bar fade was easy for me, but it was not even close. I am in a hurry every morning like the most of you. I shop for the Bistro most mornings at 3 different stores. So most of us usually grab some thing healthy-ish and jump in the car for that commute or do not eat breakfast at all ( which is what I usually do) . No matter how long your commute is , a power bar can be ingested and technically count as your “breakfast”.
Who doesn’t want a heathy bar you can eat “On the Go” and boost some energy , but does it have to taste like hay ( I love horses , just I do not want to share the complete diet with them), or just peanut butter & oats with a couple of nuts & one date shoved into it. I want “super” power/healthy bar! Good for you & tastes like food !
I found ReBar at the local Boise Co-Op. I picked it up because it said vegan & gluten-free ( I specialize in that cooking area, so I thought I’d give it a try) . I have lost 7 pounds due to my eating less gluten & eating a breakfast. I need to eat breakfast so that I do not turn into the a pig at lunch. It isn’t that I am eat unhealthy for lunch, I just get so “Hulk” Hungry by 2 pm that I eat a lot in a short amount of time. Then get “witchy” about how my stomach hurts, I ate too much , and I feel bloated. I love my boyfriend and want to KEEP him so the being “witchy” over food I stupidly ingested…..is not an option. So I am on a mission to find a good, fast, tasty breakfast, or “On the Go” food.
I opened the ReBar wrapper up for the usual commute in my 1986 Diesel Golf (Only mentioning my cool “older” car because it gets 47 miles to the gallon…..take that Smart Cars!), from Boise to Nampa where my shop is located. I was expecting usual hard brick or better yet, very chewy, but never quite being able to actually eat it, kind of fruit bar fun. I was wrong! This ReBar was mildly soft, tasty, & not too sweet either. Yeah finally someone got it right!!!
I love these : various fruits & veggies flavors. The “Original” flavor is my favorite. Each bar has 2 cups of fruit and 2 cups of vegetables in one energy bar! Certified Organic. 20 different fruits and vegetables. Gluten Free. Zero Fat. Yummers!
Now the “master chef” mind kicks in……. ok they did it (gluten-free/Vegan energy bar and it is tasty)…..How can I make one ? …..Hummmm?!
Great breakfast pick me up or portable for in the car for the commute.
Chocolate Peanut Butter ,Banana Smoothies 160z
1 Organic medium banana
2 Heaping TBS of Adams peanut butter (I prefer creamy)
1 tsp to TBS of ground flax-seed
1 tsp organic & gluten-free vanilla
2 TBS vegan organic chocolate syrup
Soy, rice, hemp, or almond milk or for the non vegan, organic milk
Add to a blender pitcher with the items above except for the “milk”
Then fill to the 16 oz line with “milk” this varies due to the size of the banana ect.
Blend or frappe’ or liquefy you drink until the are no chunks
Pour into a chilled glass for breakfast and sit on your back porch enjoying nature.
or for the busy, pour into a portable container and off you go on your busy day, but at least you ate a healthy breakfast to start your day! Most of all enjoy you healthy life!
